Autumn Spiced Breakfast Cake

Cake for breakfast? Really?


This is a breakfast for those days where you have a little more time for prep but fancy something different from the week.


A change from the traditional overnight oats or eggs but something in between which exposes you to different tastes, texture & aromas.


This ones packed full of protein, fibre & nutritionally-dense ingredients like cacao & blueberries. Spices such as cinnamon are great for regulating blood sugar to prevent those mid-morning cravings in addition to fennel & cardamom which are great for calming & settling digestion.


This is definitely one to try and is easy to bulk cook and store in the fridge for the next few days or double up for family & friends.


It's kid friendly as well!


Here is the list of goods you'll need for this amazing breakfast :


SERVES 1 - 15 MINUTES


- 40g jumbo oats

- 30g puffed rice

- 8g butter/coconut oil, melted

- 150-250ml Unsweetened coconut/almond milk

- 10g smooth almond/palm-oil free smooth peanut butter

- 1 whole egg

- 20g PPB powder (peanut powder)/3 egg whites

- 2g cacao powder

- 1/4 tsp of baking powder

- 2-3 sweetener cubes

- 1/2 tsp Ceylon cinnamon

- Seeds from 3 cardamom pods

- 1/2 tsp fennel seeds


Top this dish with:

- 60g Strawberry flavoured greek yoghurt (use Nush brand, if dairy-free)

- 100g blueberries & raspberries


Here's how to get your cake and eat it:


- Melt the butter/coconut oil in a ovenproof dish

- Pre-heat the oven to 180oC.

- In a large mixing bowl add the oats, puffed rice, nut butter, cacao, whole egg, milk, peanut powder/egg whites, baking powder, fennel seeds, cardamom seeds and cinnamon.

- Add in the melted butter/oil into the mixture and stir until everything is well incorporated.

- Make sure it is not too dry but not watery either but more like a cake/batter consistency.

- Pour the mixture into a small oven-proof dish and level it out.

- Stick in the oven and bake for 10 minutes until it is soft all the way through (or cook for 8 minutes for those who like a gooey consistency!).

- Scoop out the cake from the dish and serve with the yoghurt & berries.
