Cashew & Raspberry Topped Chocolate Chip Mousse

🌟This is a super easy, go-to breakfast alternative or snack option to break the routine.


👨🏽‍🍳Mix it up with this versatile, colourful dessert-like dish that satiates the need for an array of different tastes & textures.


🥥 Here we’ve used cashews, raspberries & desiccated coconut to top a protein packed mousse.


🧙🏼‍♀️Topping can be varied, but the soft texture of the raspberries along with the crunchy cashews and silky consistency of the mousse it seems to go amazingly well.


🥗We’ve got some healthy fats from coconut to top it off in addition to a mousse made from Skyr yoghurt & a plant-based protein powder (you can use whey for an even creamier, smoother texture).

Here’s what you’ll need:


-150g of 0% Natural Skyr Yoghurt

-30g of chocolate protein powder

-15g of dark chocolate chips

-100ml of unsweetened coconut milk (will vary depending on protein powder used)

-Optional: Sweetener OR 2 tsps of maple syrup

-Handful of raspberries

-Palm sized portions of cashews

-1 dessert spoon of desiccated coconut


Here’s how to put this one together:

  1. In a large bowl mix together the yoghurt, protein powder, chocolate chips, sweetener of choice and half of the milk. Add the milk bit by bit until you get a mousse like consistency.

  2. Add the mixture to a glass or bowl.

  3. Top with the raspberries, cashews & desiccated coconut.

  4. Serve!
