Classic Caesar Salad With A Twist

🥙More-so a preference for ‘lighter’ foods as opposed to the more winter warming comforts we’ve become accustomed to.

🥗Cue the Classic Caesar salad.


✅A great mid-week dinner or lunch option to match the warmer temperatures and fulfil your need for making use of some spring-based delights.


ℹ️ Here's the twist: Compared to most recipes and what you’ll find when dining, this one keeps the calories down but doesn’t compromise on flavours.

SHORTCUT: We get it. Sometimes you just haven't got the time to make your own Caesar sauce (do try make the time as you'll be greatly rewarded!). Try and find a 'light' Caesar sauce and use sparingly as this is where the calories really add up.

Here's what you'll need:


Serves 1


For the Caesar sauce:


- 1/2 cup 0% Greek yogurt (or dairy-free yoghurt)

- 2 dessert spoons of Extra Virgin Olive Oil

- 1/4 cup lemon juice

- 1 teaspoon lemon zest

- 2 cloves of garlic minced

- 1/4 cup parmesan cheese finely grated

- 1 teaspoon Dijon mustard

- 1/4 teaspoon Worcestershire sauce

- Salt and black pepper to taste


For the Salad:


- 1 head of gem lettuce

- 1 tablespoon of Anchovies

- 1 handful of croutons

- 100g of chicken breast

- 2 Bacon medallions

- A little sprinkle of Parmesan cheese

- Spring onion

- Red chilli


Here’s how to do this one:

  1. Add all the ingredients for the caesar dressing into a food processor and blend for 1 minute until well mixed and it forms a creamy, dressing like texture. Pour into a suitable drizzling vessel.

  2. Marinate the chicken in the garlic powder, lemon, mixed herbs, salt & pepper.

  3. Heat the pan and add in 1 tsp of Extra Virgin Olive Oil. Stir fry the chicken until cooked through (10-12 minutes)

  4. Whilst the chicken is cooking, slice up the lettuce and throw into a bowl.

  5. When the chicken is cooked, leave to set to one side. Add the bacon medallions to the hot pan and cook until crispy (8-10 minutes).

  6. Add the chicken and bacon to the bowl with the lettuce. Chop up the anchovies and add to the mix along with the spring onion & red chilli.

  7. Add in the croutons and drizzle over 2 tablespoons of the caesar dressing.

  8. Top with a little Parmesan cheese & enjoy this light, flavour-packed classic!
