Glazed Chocolate Muffins

A great weekend treat for those who want a change from the weekday routine but also want to try their luck at taking on some baking to create some delicious, nutritious chocolatey goodness.


Unlike traditional muffins that have a high energy density, these are light, fluffy & dangerously good.


Don't worry if you finish most of the batch as they're lower in calories, half the fat and a fraction of the sugar content than the shop bought alternatives but also packed full of protein to maintain that steady blood sugar curve & keep you on track.


Here's what you'll need:


For the Muffins:


30g of plan/GF flour

20g of Chocolate protein powder (We use Reflex plant protein - PTJAS257 for 40% off >> HERE)

3 Egg whites

100g Pumpkin puree

30g Sugar substitute/20ml Maple syrup

15g of Apple Sauce

1/2 tsp of baking powder

50ml unsweetened almond milk


For the Icing:


15g of Chocolate protein powder

2 tsps. of fat-free cream cheese OR coconut cream

50ml of unsweetened almond milk


Here's how to make this one:


  1. In a large bowl whisk the egg whites until you form a a light fluffy mixture that doesn't spill when you turn it upside down.

  2. Add in the pumpkin puree, apple and almond milk and whisk until mixed together. Add in the rest of the ingredients for the muffins and whisk until well combined.

  3. Pre-heat an oven to 180 degrees Celsius and brush a muffin tin lightly with coconut oil or spray with 1Kcal spray.

  4. Evenly spread the mixture across the muffin tray and add to the oven. Cook for 10-12 minutes until firm.

  5. Meanwhile to make the glazing mix very well, the chocolate protein powder, cream/cream cheese & low-calorie chocolate sauce. Add small amounts of almond milk if needed until you get an icing like consistency.

  6. Remove the Muffins from the oven and let cool for 15 minutes.

  7. Once cooled, spread the icing evenly on top of each muffin using a spreading spatula.

  8. Serve up and Enjoy the chocolatey goodness!
