Perky Pina Colada Nice Cream Sundae

Warmer temperatures calls for cold drinks, ice cream & lighter meals.


Especially if what you're eating includes great flavours, vibrant colours & satisfying textures.


Well you're gonna love this one as it includes Pina coloda style flavours with a hint of cardamom It's low in calories & combines a healthy dose of protein with nutritional goodness.


Best of all though it's a lovely ice cream/sorbet texture without any need for freezing!


This recipe uses coconut & pistachio with healthy kick of 'histamine-regulating' pineapple (we regularly get clients to use pineapple to manage hayfever symptoms due to it's bromelain content).


The pistachios which are rich in b6 and are a great addition for those who need a little sleep support.


But besides all of that it's a great one to keep in the bank as it's made in minutes & is well suited on a warm summer day. You'll need some Xanthan gum which you can get in a health food store or online.


The Xanthan gum helps thicken the mixture (those with intense gut issues beware!). A little goes a long way.


Stick all in a blender & go!


Here's what you'll need for this one:


-1 cup of ice

-1 cup of diced frozen pineapple

-300ml of coconut milk

-2 tablespoons of coconut yoghurt

-1 scoop of vanilla protein powder (we use Reflex plant protein - Use PTJAS257 for 40% off)

-10 Pistachio removed from shell (Leave 3 to crush and garnish the Sundae)

-The seeds from 2 cardamom pods

-1 level tsp (3g) of Xanthan gum

-Sweetener to taste: 2 tsps of Maple Syrup or sweetener cubes

-a pinch of Desiccated coconut to garnish


Here's what you'll need to do:


  1. Add the milk to a powerful blender followed by the rest of the ingredients.

  2. Blend until everything is blended well and serve into a Sundae glass. Top with crushed pistachio & desiccated coconut.

  3. Thats it! Enjoy
