Here's what you'll need for this one:
Serves 1
-150g 7% Turkey mince (Vegan/Vegetarians - use a plant-based mince)
-250ml tomato Passata
-2 garlic cloves, minced
-1 large red onion, diced
-1 red chilli, chopped
-1 tablespoon of hot sauce
-1 tsp of garlic powder
-2 tablespoons of balsamic vinegar
-1 tsp. of mustard
-1 tsp. of Worcester sauce
-1 vegetable stock cube
-A handful of fresh basil, chopped
-2 tablespoons of dry mixed herbs
-A pinch of Salt & pepper
-65g of Brown rice spaghetti (Doves Farm)
Here's how to make this one:
1. Pre-heat the oven to 180 degrees Celsius.
2. In a large bowl, season the turkey mince with salt, pepper & garlic powder. Roll the turkey mince into 1 inch meatballs. Add to a large oven dish and bake for 10 minutes.
3. In a large saucepan, heat 2 tsps. of your chosen cooking oil. Add in the onions & garlic and fry off until brown. Add small amounts of hot water to stop the onions sticking to the pan.
4. Once browned, add in the tomato passatta, dried herbs, Worcester sauce, mustard, hot sauce, red chilli stock cube (mixed with 100ml of hot water) and 3/4 of the freshly chopped basil. This is the spicy sauce. Let it simmer for 20 minutes, stirring every 5 minutes.
5. Bring lightly salted water to the boil in a large saucepan. Add in the spaghetti.
7. Make up your side salad with 1/2 head of lettuce, 1 salad green, cucumber, cherry tomatoes, lemon juice & salt
6. Add in the meatballs after about 15 minutes of the sauce simmering. Try not to stir too much once the meatballs have been added, to reduce them breaking up.
7. Drain the spaghetti, serve on a plate and add the meatballs with plenty of the spicy sauce. Garnish with the rest of the Basil.
8. Enjoy and share!
