👌🏽Crunchy, colourful, sweet with a beautiful tang this side dish is an epic addition to boost the nutritional content of your meal whilst providing satisfying flavours & aromas.
🥗The goodness of the slaw provides a great combo of ingredients that feed those good gut bugs.

Then here's what you'll need:
FOR THE CHICKEN NUGGETS:
- 3 slices of sourdough/gluten-free bread
- 1 tsp of garlic granules
- 1 tsp of chilli flakes
- 1 tsp of paprika
- 1 tsp of sea/Himalayan salt
- 300g of chicken breast, diced into 3cm cubes
- 1 egg
- 100ml of any milk
- low-calorie olive oil cooking spray
FOR THE PINK APPLE SLAW:
- 2 tbsps. of white wine vinegar
- Juice of 1/2 lemon
-1/2 head of red cabbage. shredded
- 1/2 tsp of granulated sweetener
- 5 spring onions, trimmed & sliced
- 1 small pink lady apple, skin on
- a large pinch of sea salt & black pepper to season
- a pinch of dried rosemary
HERE'S HOW TO PUT THIS TOGETHER:
Preheat an oven to 170oC and line a baking tray with greaseproof paper.
In an electric chopper or food processor, blitz together the bread, garlic granules, paprika, chilli flakes, salt & pepper. This is the breadcrumb mix
Place the breadcrumb mix onto a baking tray and oven bake for 10 minutes until well dryed out (be careful as it burns very easily).
Whisk the eggs and milk together in a large bowl. Add in a splash of lemon juice to the mix and add in your diced chicken breast. Leave the breast to soak in the egg wash for at least 10-15 minutes but ideally for 3-12 hours for extra tenderness.
Place the dryed breadcrumbs into a large shallow bowl.
Add around 3-4 pieces of egg washed chicken to the breadcrumbs at a time. Use one hand to add and the other hand to toss the breadcrumbs over the chicken (don't use this hand to handle the chicken).
Repeat until all the chicken is covered.
Add the chicken to a greaseproof lined baking tray and spray with low-calorie spray (3-4 sprays per side of each chicken piece) and cook in the oven for 20-25 minutes.
Whilst the chicken is cooking prepare the slaw by mixing the white wine vinegar, lemon juice, water dried rosemary & sweetener in a bowl.
Coarsely grate or cut the apple into thin strips. Toss the apple in the vinegar & lemon juice mix
Add the cabbage & spring onions, season with salt & pepper.
Serve the chicken nuggets & slaw in a dish & enjoy!
