🥘 A recipe to expand your culinary skills & experience.
🍚 When you break it down it’s fish, rice & vegetables made better with a touch of Vietnamese goodness.
👌🏽Goodness in the form of Nuac Cham sauce.
✅Still utilising great ingredients, this sauce adds a layer of flavour you’ll want to keep in the recipe bank for future events.
💪🏽Packed full of protein, healthy plants, colours, flavours & textures, this one will leave you satiated and nourished for the evening and lunch the next day, if you decide to double up, which we recommend you do!
Here’s what you’ll need:
Serves 2
For the rice bowl:
➡️300g Cod Loin, diced into small cubes
➡️Egg wash: 1 egg + 100ml of any milk
➡️50g of breadcrumbs
➡️100g of white rice
➡️100g of cucumber, diced lengthways
➡️1 large carrot, grated
➡️2 spring onions, diced
➡️1 red chilli, diced
For the Nuoc Cham sauce
-1/4 cup of fish sauce
-1 tablespoon of maple syrup
-1/3 cup of water
-2 Tbsps of lime juice
-2 taps. of freshly squeezed lime juice
-2 taps. of rice wine vinegar
-1 Thai chilli pepper, finely diced
-1 clove of garlic, grated
Here’s how to make this one:
Pre-heat the oven/air-fryer to 180oC
Wash your white rice with a pinch of salt until the water is clear and cook until light and fluffy.
Set out 2 bowls for the egg wash & breadcrumbs
Pull up your sleeves and add 5-10 pieces of cod to the egg wash and mix well with the wash.
Piece by piece, move the fish pieces from the egg wash and add to the breadcrumbs so all pieces are well covered. Add each piece to a separate tray. Do this for all the pieces.
Add the tray of breaded cod to the oven or place into an air fryer and cook for around 20 minutes until golden brown.
Whilst the cod is cooking, chop and prepare the side salad and Nuoc Cham sauce
For the Nuoc Cham sauce add all the ingredients to a bowl and whisk well until everything is well dissolved.
Once the breaded cod is cooked, serve with the white rice & side salad. Pour 2 tablespoons of the Nuoc Cham Sauce over the Cod pieces, white rice & salad.
