Winter Warming Shepherd's Pie

Oh it's so cold outside!


So you'll definitely want something hearty, warming & comforting.


But sometimes finding an easy dinner option can be difficult especially if your kitchen skills are limited!


This recipe is designed to kickstart cooking newbies.


Shepard's pie is a classic British dinner.


What's great about this is that you can freeze it in portions and simply whack it in the oven when you've finished a busy day at work.

Here's what you'll need:

- 5 diced Carrots - 3 diced onions - 4 crushed garlic gloves - 1 1/2 tsp Himalayan Salt - 2 tsps. of Extra Virgin Olive oil - 1 tbsp oregano - 1 tbsp parsley - 1 tsp sage - 2 tbsp black pepper - 1 tsp ginger - 2 tbsp Spanish paprika - 2 tbsp tomato paste - 250g diced mushrooms - 500g 5% minced lamb (Can use beef but then it is not 'shepherds pie'.) - 1 cup of beef stock or 1 beef stock cube - 1 cup of boiled water - 150g of fresh beef gravy - 5 medium sized potatoes peeled and diced. - 1/4 cup of almond/cashew milk


Here's how to make this one:

1. Start by heating the Extra Virgin Olive Oil on a medium heat until it's melted and then add the beef and simmer for 10 minutes.

2. Boil the potato for 20 minutes (until soft. Mash when this is done. Add almond milk to make a creamy mash).

3. Add the onions and herbs/ salt and tomato paste and stir until the mince is well integrated with the spices.

4. Add the carrots and mushrooms. Meanwhile add the stock cube to the cup of water and stir until dissolved.

5. Add the gravy and stock into the mince and stir. Leave this to simmer on a low-medium heat uncovered until carrots are cooked and water has been soaked up by the mince. If it looks too watery then cook for longer.

6. Pour the mince into a baking dish deep enough for the mince and the potato.

7. With a spatula spread the sweet potato over the mince until covered evenly. Aim for at least 1cm.

8. Oven bake this for 20 minutes.


9. Remove from the oven, let cool & serve!

This goes great with a side salad as it's not to heavy! If you wish to freeze this place into oven proof containers, leave to cool down and freeze.
